The PROW-18 proofer accommodates 18 full-size 18 × 26 in sheet pans. The independent temperature and humidity controls allow the cabinet environment to be fine-tuned, with separate control of heat and moisture for proofing dough or holding crisp finishes. The PROW-18 proofing cabinet provides relative humidity up to 95%. The PROW-18 proofing cabinet has 3-inch shelf spacing. The PROW-18 has a heavy-duty 430 stainless steel exterior and a premium 304 stainless steel interior designed for corrosion resistance and long-term use. The PROW-18 proofing cabinet has full-view glass Dutch doors. The Nu-Vu PROW-18 with Warming Option draws 19.2 A at 208 V, 1 phase, and 50 or 60 Hz.
