The Southbend Steam gas oyster cooker is available in a two-cooker configuration, model OB-2-2-27-G-SB. The OB-2-2-27-G-SB has a listed capacity of 2 x 2 US Quart per kettle. The gas oyster cooker operates with a steam boiler at 9–11 psi (62–76 kPa). The gas oyster cooker is available for natural gas. gas input btu: 200000. The Gas Oyster Bar cooker controls are equipped for operation at 115 VAC. Standard features include a water treatment system, CSD-1 boiler controls, electronic ignition, a split water line, and automatic boiler blowdown. The oyster cookers are constructed of type 316 stainless steel inner and outer shell with a #4 finish, one piece welded construction. The oyster cookers are mounted on a cabinet base with a full perimeter angle frame, reinforced counter, spillage sink complete with drain and drain screen, boiler mountings, gas boiler with controls, removable side panels, and stainless steel legs fitted with adjustable flanged feet. Each oyster cooker tilts 90 degrees. The gas oyster cooker has an all #4-finish stainless steel exterior.
