Hydrovection Ovens

The Blodgett HVH-100E is an electric hydrovection oven. The Blodgett HVH-100E oven is offered in a single-oven configuration. Each HVH-100E oven section has ten rack positions. Each HVH-100E oven section accepts five 18 in × 26 in standard full-size baking pans in left-to-right positions. The HVH-100E oven has a listed electrical input of 15 kW per oven section. At 208 VAC, 60 Hz, and 3 phase, the Blodgett HVH-100E oven draws 38 A on L1. controls: one touch control with new 7-inch touchscreen. The touchscreen supports rack timing, multi-shelf recipes, recipe writing downloads to a laptop, and HACCP storage capability. Hydrovection cook modes provide low or high humidity, and a hot-air cook mode is provided for baking and pastries. The oven has a fully welded angle-iron frame and a stainless steel front, top, and sides.
