PROW-18 Proofing Cabinet. The PROW-18 proofer accommodates 18 full-size 18 × 26 in sheet pans. The Nu-Vu PROW-18 configuration has a rated input of 2 kW at 240 V, 1 phase, and 50 or 60 Hz. The independent temperature and humidity controls allow the cabinet environment to be fine-tuned, with separate control of heat and moisture for proofing dough or holding crisp finishes. The PROW-18 is described as having full stainless-steel construction, with 18-gauge 304 stainless steel for the interior and 18-gauge 430 stainless steel for the exterior.
