The Blodgett HV-100E oven is a hydrovection oven. Electric Additional Section. to be ordered for stacking with an existing HV-100E. The Blodgett HV-100E oven uses electric fuel. The HV-100E is rated at 15 kW per oven section. 480V, 3PH. Each oven section of the Blodgett HV-100E accepts five 18 in × 26 in standard full-size baking pans at once. Each oven section of the Blodgett HV-100E has ten rack positions. The Blodgett HV-100E standard control can store 100 recipes. The oven has a 304 stainless steel coved-corner liner for easy cleaning, five stainless steel racks, two halogen interior lights, a drain in the oven cavity, and up to 2.5 in of blanket insulation for greater heat retention. The oven has a USB connection for recipe upload or download, a four-speed auto-reversing fan motor for even baking, and cavity-vent control to release steam at the push of a switch.
