The steamer is a convection steamer complete with a … 10 gallon kettle on a modular electric steam boiler base. Each ECX-10S compartment holds 2 pans that are 6 in deep. Each ECX-10S compartment holds 10 pans that are 1 in deep. Each ECX-10S compartment holds 5 pans that are 2-1/2 in deep. Each ECX-10S compartment holds 3 pans that are 4 in deep. The steam boiler is rated at 36 kW. The electric steam boiler operates at 9–11 psi (62–76 kPa). Each cooking chamber is all-welded type 316 stainless steel, fully insulated, and provided with removable stainless steel pan supports. Each cooking compartment of the steamer includes a timer with a duration of 60 minutes. Each compartment has a ready and cooking pilot light; steam flow to the chamber is interrupted when the compartment door is opened during a cooking cycle and reactivated when the door is closed. An audible signal sounds at the end of the cooking cycle.
