The Southbend HDG-48-30 has a gas input of 120,000 BTU/hr for natural gas. Each foot of the griddle is heated by a “U” shaped burner; each burner is controlled by a thermostatic control. For safety, each pilot has a flame failure device. The front, sides and vent are constructed of #3 polished 430 and 304 stainless steel; the bottom and rear are aluminized steel. The sides are reinforced and fully insulated. Each Southbend HDG-30 unit must be installed under a vented hood.
