SCX-10S-10. The Southbend SCX-2S and SCX-10S convection steamers have two compartments. The SCX-10S-10 with one 6-gallon and one 10-gallon kettle has a 10-pan compartment capacity for 1-inch-deep pans. The SCX-10S-10 with one 6-gallon and one 10-gallon kettle has a 5-pan compartment capacity for 2-1/2-inch-deep pans. The SCX-10S-10 with one 6-gallon and one 10-gallon kettle has a 3-pan compartment capacity for 4-inch-deep pans. 2-pan compartment capacity for 6-inch-deep pans. fuel type: steam. The boiler is equipped for incoming steam pressure of 25–45 psi (170–310 kPa). The steam-coil-heated steam boiler operates at 9–11 psi (62–76 kPa). The boiler is equipped for incoming steam flow of 200 lb (90 kg) per hour. The steamer shall be constructed of satin finish stainless steel, type 304, with a cooking chamber of one-piece, all-welded, type 316 stainless steel. The timing of each steamer compartment is independently controlled.
