Convection Ovens
The Lang GCOF convection ovens are gas heated. The Lang GCOF oven accommodates 18″ × 26″ full-sheet pans. For 18″ × 26″ full-sheet pans, the Lang GCOF oven permits lengthwise loading. The Lang GCOF gas-heated full-size unit has a 55,000 BTU/hr gas input. Solid state temperature control accurate to ± 4°F. The oven has a rear-mounted blower with a two-speed motor and pulse control. The oven exterior is all stainless steel and the cooking compartment is porcelainized steel. The Lang GCOF oven compartment-door windows have double-pane construction.
