The Southbend KELT-20F, KELT-30F, KELT-40F, and KELT-60F kettles are self-generating steam kettles. The KELT-60F kettle has a rated capacity of 60 gallons (227 liters). The KELT-60F kettle has 24 kW available as standard. The 24 kW, three-phase electrical configuration is listed at 208 V. The 24 kW, 208 V, three-phase electrical configuration draws 66.6 amps per line. The Southbend KELT-20F, KELT-30F, KELT-40F, and KELT-60F kettles are full-jacketed. The Southbend KELT-20F, KELT-30F, KELT-40F, and KELT-60F kettles are tilting kettles. The kettle's tilt mechanism is sealed stainless steel, tilts the kettle forward a full 90° for complete emptying, and is self-locking for positive stop action. When the power switch is on and the temperature control knob is dialed, the temperature pilot light illuminates and contactors close to power the elements. Steam generation continues until the preselected temperature is reached; the cycle repeats as jacket-water temperature drops slightly, maintaining the selected cooking temperature. Temperature controls are calibrated to prevent the heating elements from generating steam pressure beyond the kettle's rated working pressure. If a temperature-control failure leaves the elements energized, the safety valve releases excess pressure and steam; a safety probe senses low jacket-water level, activates the LOW WATER indicator light, and signals the liquid-level control to switch off power until the water level is replenished.
