Artisan Stone Single Deck Oven. The Doyon 2T1 oven holds two 18 × 26-inch full-size sheet pans at once. The consultant specification describes one deck with a 3/4-inch-thick NSF-approved stone interior. The Doyon 2T1 oven uses an independent steam tank per deck. The Doyon 2T1 oven's control is programmable. The independent dual-zone element control provides temperature calibration above and below the product and compensates for heat loss during loading and unloading. The Doyon 2T1 oven is rated 6.5 kW in the 240 V, single-phase configuration. The Doyon 2T1 oven reaches baking temperatures up to 600°F. The oven has full stainless-steel construction … a single 1/2-inch water-line connection … assembled for quick installation … a 1/2-inch drain line out the rear of the unit.
