DMT-10S-10. The DMT-10S-10 kettles use direct steam. The DMT-10S-10 assembly's kettles are mounted on a cabinet base. Each of the two DMT-10S-10 kettles has a capacity of 10 gallons [38 litres]. The food-contact liner of each DMT-10S-10 kettle is 316 stainless steel. The steam jacket around each kettle covers the lower 2/3 of the kettle. The direct-steam supply for the DMT-10S-10 must be at least 5 psi (34 kPa) and no more than 45 psi (310 kPa). Stainless steel mounting legs allow each kettle to tilt forward past 90° for complete emptying and conceal the steam supply and condensate return connections; the right leg is fitted with a steam control valve. The cabinet is constructed with a full-perimeter painted angle frame, reinforced counter, #4-finish stainless steel exterior, removable side panels, and hinged doors with magnetic latches. It is mounted on 6-inch (152 mm) stainless steel legs with four adjustable flanged feet for floor securing, and includes a hot-and-cold-water faucet with control valves and 3-inch (76 mm)-deep sinks with drain and splash guard.
