The cabinets have all-stainless-steel double-wall construction, with one controller and one pan cavity per module, and black rubber feet. Each pan in the Carter-Hoffmann modular holding cabinets has its own controller. Each pan in the Carter-Hoffmann modular holding cabinets has a digital temperature display. Factory setpoints are pre-programmed for the controllers: top heaters 240°F (115°C) and bottom heaters 195°F (91°C). Preset timers are 30 minutes for covered foods and 20 minutes for uncovered foods. The top heaters of the modular holding cabinets can be set up to 290°F (144°C). The bottom heaters of the modular holding cabinets can be set up to 225°F (107°C). Programming can be done manually for each pan or via USB for up to 25 menu items for each pan.
