The Southbend KECTC kettle is a counter kettle. KECTC-12. The KECTC-12 has a rated capacity of 12 gallons (45 liters). The kettle has a double-wall interior forming a steam jacket around the lower 2/3 of the kettle; the jacket enclosure contains factory-sealed distilled water. The Southbend KECTC kettle has a type 316 stainless steel interior cooking surface. Construction is all-welded #4-finish type 304 stainless steel. The controls are water-resistant and integrally mounted, and include a power switch, solid state thermostat, pilot light, vacuum/pressure gauge, safety valve, and low-water shut-off with low-water light. The kettle's tilt mechanism is self-locking for positive stop action and tilts past 90 degrees for ease of cleaning. The Southbend KECTC kettle operates electrically. The KECTC-10 and KECTC-12 each have rated electrical input of 12.0 kW. The Southbend KECTC kettle is specified for operation at 240 VAC. The KECTC-10/12 models are listed with phase 3 electrical configurations.
