Ventless Combination Ovens

The supplied BLCT-6E-H is a tabletop combi oven. The standard two-piece rack for the BLCT-6E-H holds five 12 × 20 × 2 in North American hotel pans. The oven's touchscreen control stores up to 1500 recipes, with up to 15 steps each. Timed steam injection or instant steam on demand is available at any point in the cook cycle. The Hoodini ventless hood combines a catalytic system with a condensing system. The condenser removes steam exhaust while the catalyst removes smoke and fumes. cleaning system: automated combiwash system with very low water and detergent consumption; no contact with chemicals; no proprietary chemicals required. secondary power input: 120vac, 1 ph, 15 amp max.; dedicated circuit.
