The Southbend Steam Model SCDA-2S … pressure compartment cooker. The SCDA-2S steamer has 2 compartments. The SCDA-2S steamer has a capacity of 8–16 pans. The boiler is equipped for incoming steam pressure of 25–45 psi (170–310 kPa). Each cooker compartment operates at a maximum pressure of 6 p.s.i. (41 kPa). Each compartment is independently controlled by an automatic timer with visible and audible signals. The cooker can operate in pressureless free-venting mode using a selectable switch for the top compartment. The cooker is constructed of all-welded stainless steel. The cooker is constructed of type 304 stainless steel. The cooker doors have a removable aluminum-plate inner liner, a full-perimeter gasket seal and a wheel-and-screw closing mechanism. At the end of the cooking cycle, the controls automatically shut off incoming steam, vent pressure and drain condensate from the compartment, with a continuous audible signal until turned off manually. The cooker controls have a supply voltage of 115 VAC.
