Hydrovection Ovens

section configuration: full-size electric hydrovection oven with helix technology; model hvh-100e; single/double compartment. Each HVH-100E oven section accepts five 18 in × 26 in standard full-size baking pans in left-to-right positions. 240V, 3PH. The HVH-100E oven has a listed electrical input of 15 kW per oven section. The touchscreen supports rack timing, multi-shelf recipes, recipe writing downloads to a laptop, and HACCP storage capability. The oven has a fully welded angle-iron frame and a stainless steel front, top, and sides. Hydrovection cook modes provide low or high humidity, and a hot-air cook mode is provided for baking and pastries. The Blodgett HVH-100E oven's water connection for each section has a 3/4-inch NPT size/thread. The Blodgett HVH-100E oven's water connection for each section is for cold water only. The HVH-100E oven requires water pressure of at least 30 PSI. The HVH-100E oven's water pressure is specified up to 50 PSI.
