The controller has an alphanumeric display for 25 menu items, a digital temperature and time display for each pan, a countdown timer, and an audio/visual alarm. It provides one controller for each pan. The far-left controllers control bottom heaters for each shelf, while top heaters are controlled individually by each controller. The timer can be set for up to 99 minutes in 1-minute increments; the countdown converts to seconds when less than one minute remains. Individual pan timers are provided. Pass-through cabinets also have rear displays for temperature and time. The cabinet material is all stainless-steel construction with a 20-gauge polished exterior. Each cavity has a scratch-resistant polymer lower surface with a recessed aluminum plate. Lids are removable for holding drier foods and cleaning. Built-in, removable pan shrouds are provided for each cavity. They can be removed without tools for cleaning or for holding uncovered food products. Lids in place provide a seal for pans containing moisture-sensitive food products. The top heaters of the modular holding cabinets can be set up to 290°F (144°C). The bottom heaters of the modular holding cabinets are rated at 300 watts, one for each shelf. The bottom heaters of the modular holding cabinets can be set up to 225°F (107°C).
