The PROW-18 proofer accommodates 18 full-size 18 × 26 in sheet pans. fuel type: electric. 220V, 50 HZ, 1PH. The independent temperature and humidity controls allow the cabinet environment to be fine-tuned, with separate control of heat and moisture for proofing dough or holding crisp finishes. The PROW-18 has a heavy-duty 430 stainless steel exterior and a premium 304 stainless steel interior designed for corrosion resistance and long-term use. The PROW-18’s full-view glass doors provide visibility without sacrificing cabinet stability. The doors allow staff to open only the top or bottom section as needed, retaining heat and humidity while saving energy. The PROW-18 proofing cabinet has 3-inch shelf spacing.
