The Zephaire-100-E is specified in a double-compartment configuration. The standard-depth baking compartment of the Blodgett Zephaire-100-E accommodates five 18 × 26 in. standard full-size baking pans per compartment. The Zephaire-100-E is electrically heated. At 480 VAC, three phase and 60 Hz, the Zephaire-100-E draws 14/13/13 A on L1-L2-L3. The Blodgett Zephaire-100-E temperature control range is 200°F (93°C) to 500°F (260°C). The standard control on the Blodgett Zephaire-100-E is an SSI-M solid-state infinite control. The Blodgett Zephaire-100-E SSI-M control configuration includes a manual timer. The exterior frame is full angle-iron, and the front, top, and sides are stainless steel. The baking compartment has a double-sided porcelainized liner (14 gauge) and an aluminized blower wheel.
