The Southbend KECTC kettle is a counter kettle. The KECTC-12 has a rated capacity of 12 gallons (45 liters). The kettle has a double-wall interior forming a steam jacket around the lower 2/3 of the kettle; the jacket enclosure contains factory-sealed distilled water. The controls are water-resistant and integrally mounted, and include a power switch, solid state thermostat, pilot light, vacuum/pressure gauge, safety valve, and low-water shut-off with low-water light. Construction is all-welded #4-finish type 304 stainless steel. The Southbend KECTC kettle has a type 316 stainless steel interior cooking surface. The Southbend KECTC kettle is NSF certified. The Southbend KECTC kettle operates electrically. The Southbend KECTC kettle is specified for operation at 208 VAC. rated electrical input of 12.0 kW. The KECTC-10 and KECTC-12, three-phase versions, are listed for 208 V. The KECTC-10 and KECTC-12 three-phase versions each draw 33.3 A per line at 208 V.
