Artisan Stone Deck Oven. The Doyon 3T1 Artisan Stone Deck Oven is a single-deck oven. The Doyon 3T1 oven holds three 18 in x 26 in full-size sheet pans. The Doyon 3T1 oven control has a touchscreen interface. The Doyon 3T1 oven has an eye-level digital control. The Doyon 3T1 Series Artisan Stone Deck Oven provides zero convection, full temperature control, and customizable deck heights to adapt to different products. The baking stone supplied with the Doyon 3T1 Artisan Stone Deck Oven is 3/4 inch thick. The oven has independent element control above and below the product; the system dynamically compensates for heat loss during loading and unloading. The Doyon 3T1 oven steam system has an independent steam tank for each deck. The Doyon 3T1 oven is an electric oven. The Doyon 3T1 electrical configuration rated at 480 V and phase 3 draws 10 A. The Doyon 3T1 electrical configuration rated at 480 V and phase 3 has an electrical input of 8.3 kW.
