The KELT-40F is a steam kettle. The Southbend KELT-20F, KELT-30F, KELT-40F, and KELT-60F kettles are tilting kettles. The KELT-40F kettle has a rated capacity of 40 gallons (152 liters). The 33 kW, 208 V, three-phase electrical configuration draws 91.6 amps per line. The 33 kW electrical configuration is three phase. The 33 kW, three-phase electrical configuration is listed at 208 V. The kettle's tilt mechanism is sealed stainless steel, tilts the kettle forward a full 90° for complete emptying, and is self-locking for positive stop action. When the power switch is on and the temperature control knob is dialed, the temperature pilot light illuminates and contactors close to power the elements. Steam generation continues until the preselected temperature is reached; the cycle repeats as jacket-water temperature drops slightly, maintaining the selected cooking temperature. The heating elements are thermostatically controlled to provide precise temperatures throughout the range from slow simmer to rolling boil.
