Electric Tilt Braising Pan. The UCBTE082V1 braising pan has a capacity of 82 gallons. The UCBTE082V1 has an electric power rating of 27.00 kW with the 3-phase 208 V, 60 Hz supply specification. The UCBTE082V1 braising pan's control panel has a 7-inch touch screen. The panel board provides five cooking modes with working-temperature setting, cooking type and time setting, manual and program modes, and creation and editing of multiphase cooking programs with phase parameters and mixer settings. It also provides clockwise and counterclockwise speed adjustment and mixer pause times, minimum-speed mixer operation during tank tilting to facilitate pouring, tank water-load setting up to 140° F/cold with automatic liter measurements, and control of cooking-tank tilt and return from the Touch Screen or keyboard. The cooking vessel is stainless steel AISI 304, with a 12 mm bottom and 3 mm walls. The UCBTE082V1 electric tilt braising pan uses armoured elements as its heating method. The UCBTE082V1 braising pan has electric tilting on the front part. The safety system includes an emergency button, heating blocking for excess temperature with a manual-resettable safety thermostat, and heating interruption during vat tilting.
