ECX-10S-36 models are convection steamers. The electric steam boiler operates at 9–11 psi (62–76 kPa). A steamer with a 42-kW boiler draws 101.0 amps per line at 240 V, 3 phase. The steamer's electrical connection is field wiring, as specified on the data plate. Standard features include a water treatment system, split water line, CSD-1 boiler controls, automatic blowdown and a drain tempering system for the 140 degree temperature requirement (requires 1/2” cold water connection). Standard boiler controls shall include automatic water level control, pressure gauge, water gauge glass, operating pressure control with pressure safety control, safety relief valve and cathodic protector. The steamer shall be constructed of #4 finish stainless steel type 304, with a cooking chamber of one-piece, all welded, 316 stainless steel. Each steamer compartment's timer has a 60-minute duration. Each steamer compartment's timer is mechanical. An audible signal shall sound at the end of the cooking cycle.
