The Southbend KECTC kettle is a counter kettle. The KECTC-10 has a rated capacity of 10 gallons (38 liters). The kettle has a double-wall interior forming a steam jacket around the lower 2/3 of the kettle; the jacket enclosure contains factory-sealed distilled water. The Southbend KECTC kettle has a type 316 stainless steel interior cooking surface. The controls are water-resistant and integrally mounted, and include a power switch, solid state thermostat, pilot light, vacuum/pressure gauge, safety valve, and low-water shut-off with low-water light. The Southbend KECTC kettle's temperature range has an upper setting of 285°F (140°C). The Southbend KECTC kettle's temperature range has a lower setting of 165°F (74°C). The Southbend KECTC kettle operates electrically. The KECTC-10 and KECTC-12 each have rated electrical input of 12.0 kW. The KECTC-10 and KECTC-12, single-phase versions, are listed for 240 V.
