The cooker’s cooking vessel is stainless steel AISI 316, thickness 30/10; its perforated basket is stainless steel AISI 316, thickness 15/10, with electric tilting. Its balanced lid is stainless steel AISI 304, thickness 10/10. The supporting structure is stainless steel AISI 304, thickness 20–30/10; heat insulation is guaranteed by thick glass-fibre panels; and the outer cover is stainless steel AISI 304 with a fine satin finish, thickness 10/10. Adjustable stainless steel AISI 304 feet ensure levelling, and the protection level is IPX4. The cooker’s panel board includes an ON/OFF switch; a resistive 7-inch touch screen; keys for moving the basket; two cooking modes with working-temperature setting or minimum/maximum heating; cooking-type and time setting; Manual and Program cooking modes; program creation and editing with cooking type and temperature/time parameters and text messages; delayed cooking with date, time and programming cycle; touch-screen language settings; and input of different measurement units. The cooker’s display/signal features include the cooking type, temperature probes used and set temperature; a heating-operation visual alarm; time-to-end-of-cycle display; insufficient-water-level indication; signalling and blocking heat if there is no gas; a gas-control-unit RESET message; a visual alarm with 10 seconds’ notice by lighter on the touch screen during basket lifting; and self-diagnostics. The safety system includes an emergency button and heating interruption due to insufficient water in the vat. The cooker’s heating is controlled by an electronic board with automatic activation at least 2 °C before the setpoint and interruption of heating if the water level is insufficient. It has an overflow device and front drain cock in stainless steel, 2 inches, with an insulating handle. A removable cold-water shower head is optional. The electric socket is for connection to UBAVRDX../UBAVRSX.. and is not for other purposes; a USB connection downloads HACCP data and updates software and load-cooking programs; and the machine can be interrogated using MODBUS over an RS485 serial interface.
