The Southbend electric steam “Do-All” cooker with cabinet base is offered as model EDA-3S. The EDA-3S steamer has a capacity of 12–24 pans. The EDA-3S steamer has 3 compartments. The lower compartment of the Southbend Steam model EDA-2S or EDA-3S cooker operates as a pressure cooker only. The operator can select the upper compartment of the Southbend Steam model EDA-2S or EDA-3S cooker to operate either as a pressureless free-venting cooker or as a pressure cooker. The Southbend electric steam boiler is rated at 42 kW. The electrically heated steam boiler is specified for a supply voltage of 240 VAC. The electrically heated steam boiler is specified for three-phase electrical supply. The cooker shall be constructed of all-welded satin finish stainless steel, type 304. The doors shall have a removable inner liner of aluminum plate with full perimeter gasket seal, an outer liner of one-piece all-welded stainless steel, and a wheel-and-screw closing mechanism. The Southbend electric steam boiler operates at 9–11 psi (62–76 kPa).
