Each compartment of the GCX-2S models holds 2 pans at 4-inch pan depth. Each compartment of the GCX-2S models holds 3 pans at 2-1/2-inch pan depth. Each compartment of the GCX-2S models holds 1 pan at 6-inch pan depth. Each compartment of the GCX-2S models holds 6 pans at 1-inch pan depth. Natural Gas. The GCX-2S-6-10 steamer has a 250,000 BTU boiler. The gas-heated steam boiler operates at 9–11 psi (62–76 kPa). The boiler controls include automatic water-level control. The steamer compartments have a 60-minute mechanical timer in each compartment. Each cooking chamber is described as all-welded type 316 stainless steel, fully insulated, and provided with removable stainless-steel pan supports.
