The Southbend KDPS-20, KDPS-30, KDPS-40, KDPS-60, KDPS-80, and KDPS-100 pedestal kettles are direct-steam connected. The KDPS-80 kettle has a capacity of 80 gallons (303 liters). The liner of each Southbend KDPS-20, KDPS-30, KDPS-40, KDPS-60, KDPS-80, and KDPS-100 kettle is 316 stainless steel. The kettle has a double-wall interior that forms a steam jacket around the lower 2/3 of the kettle. Construction is all-welded satin-finish stainless steel, type 304. Each Southbend KDPS-20, KDPS-30, KDPS-40, KDPS-60, KDPS-80, and KDPS-100 kettle has a 2 in (50 mm) sanitary draw-off valve. The standard convenience features include a perforated strainer with the sanitary draw-off valve, a spring-assist hinged counterbalanced stainless steel domed cover, and a faucet bracket. Spring assist hinges are on 60, 80 and 100 gallon kettles.
