The Southbend Steam … ECX-10S … models are convection steamers. The ECX-10S-[6] model has a capacity of 10 pans at 1-in pan depth. The ECX-10S-[6] model has a capacity of 2 pans at 6-in pan depth. The ECX-10S-[6] model has a capacity of 3 pans at 4-in pan depth. A steamer with a 42-kW boiler draws 116.6 amps per line at 208 V, 3 phase. The electric steam boiler operates at 9–11 psi (62–76 kPa). The unit comes standard with a water treatment system, split water line, CSD-1 boiler controls and automatic blowdown. The steamer shall be constructed of #4 finish stainless steel type 304, with a cooking chamber of one-piece, all welded, 316 stainless steel. The steamer's drain is to be piped to an open floor drain.
