GCX-10S-36 … a convection steamer on a modular, gas-fired steam-boiler base, with a stainless-steel type 304 exterior and #4 finish. The steamer is mounted on a cabinet base. Each compartment of the GCX-10S-[36] steamer holds 5 pans with 2-1/2 in pan depth. Each compartment of the GCX-10S-[36] steamer holds 2 pans with 6 in pan depth. Each compartment of the GCX-10S-[36] steamer holds 10 pans with 1 in pan depth. Each compartment of the GCX-10S-[36] steamer holds 3 pans with 4 in pan depth. The convection steamer's cabinet base is specified with a full-perimeter angle frame, reinforced counter and boiler mountings, gas boiler with controls, all-stainless-steel exterior, hinged door(s) with magnetic latch, and stainless-steel legs fitted with adjustable flanged feet. The cooking chambers are all-welded type 316 stainless steel, fully insulated, and provided with removable stainless-steel pan supports. Standard features listed are a water treatment system, CSD-1 boiler controls, electronic ignition, automatic blowdown, split water line, and a drain tempering system for a 140-degree temperature requirement; the drain tempering system requires a 1/2-inch cold-water connection. The control housing is accessible through a fully removable side panel. Each compartment includes a 60-minute mechanical timer with a ready pilot, cooking pilot light, and audible signal that sounds at the end of the cooking cycle. The GCX-2S and GCX-10S models use natural gas at a water-column pressure of 7–14 in [178–355 mm]. The gas-fired steam boiler is rated at 9–11 psi (62–76 kPa).
