The CTBHA/CTBRHA half-size convection oven uses electric heat. The CTBHA/CTBRHA standard-depth baking compartment accepts standard half-size baking pans measuring 13 × 18 in. Each oven section has nine rack positions. The CTBHA/CTBRHA oven has a SimpleTouch capacitive touchscreen control interface. The oven offers Manual Mode, Recipe Cooking, and Rack Timing; convection-only mode for baking and pastries; and HydroAssist Mode, which provides humidity. The oven has programmable water injection with 10 moisture levels and records HACCP data and a fault log for easier troubleshooting if needed. The CTBHA/CTBRHA oven is available in a 1-phase, 208 V configuration. The CTBHA/CTBRHA oven draws 27/0/27 A on L1-L2-L3 at 208 V, 1 phase. The oven has a full angle-iron frame, stainless steel front, top, sides, and vent, and solid mineral fiber insulation around the cooking chamber.
