The Southbend Steam BGMTS-30 or BGMTS-40 is a hydraulic tilting skillet. BGMTS-40 gas modular tilt skillets have a capacity of 40 gallons (152 liters). BGMTS-40 gas modular tilt skillets have a gas input of 100,000 BTU/hr. BGMTS-30 and BGMTS-40 gas modular tilt skillets require natural-gas supply pressure of 6–14 inches water column. The BGMTS-30 and BGMTS-40 skillets have a solid state thermostat. min temp f: 100. The BGMTS-30 and BGMTS-40 skillets have a highest stated cooking temperature of 450°F (232°C). The cooking surface is 3/4 in triple-ply construction with a 3/8 in thick aluminum core, ensuring even heat distribution over the entire cooking surface. The pan is formed from 10 gauge 304 stainless steel with a #4 finish exterior and polished interior with coved corners for easy cleaning.
