The CH1600U cook-and-hold cabinet has dual cavities. Each CH1600U cavity accommodates eight GN 2/1 pans. The CH1600U has an approximate meat capacity of 240 lb. The CH1600U uses electric power. input kw: 6.2. voltage: 230. The controls have a master on/off switch with a “start/cancel” button for cook cycles and a touchpad to view actual temperature. Separate controls and displays are provided for cook temperature and hold temperature. An eighteen-hour digital timer display shows cook temperature in countdown mode during the cook cycle and automatically switches to count-up during the hold cycle. The cabinet is all stainless steel, double-wall, insulated construction. The CH1600U cook-and-hold cabinet has a lowest temperature setting of 100°F for the hold cycle. The CH1600U's stated holding range has an upper limit of 200°F (93°C). lowest temperature setting of 100°F for the cook cycle. The CH1600U's stated slow-cooking maximum temperature is 325°F (161°C).
