Hydrovection Ovens

The Blodgett HVH-100E is an electric hydrovection oven. The Blodgett HVH-100E oven is offered in a double-oven configuration. Each HVH-100E oven section has ten rack positions. Each HVH-100E oven section accepts five 18 in × 26 in standard full-size baking pans in left-to-right positions. The HVH-100E oven has a listed electrical input of 15 kW per oven section. electrical connection type: 240 vac, 60 hz, 3 phase, 15 kw. controls: one touch control with new 7-inch touchscreen. The HVH-100E oven's One Touch control stores up to 500 recipes. Hydrovection cook modes provide low or high humidity, and a hot-air cook mode is provided for baking and pastries. The HVH-100E has a fully welded angle-iron frame and a fully welded 304 stainless-steel liner, with the liner top and bottom closed. ext construction: stainless steel front, top and sides.
