The Southbend KDPS-80F is a commercial direct steam floor kettle in an 80-gallon stationary pedestal, full-jacketed design, so it fits high-volume batch cooking rather than countertop or low-output work. It uses direct steam at 5 psig with 0.75-inch steam inlet and 0.5-inch return, has a 316 stainless liner, spring-assisted hinged cover, 2-inch tangent draw-off with TPS strainer, and a faucet bracket; overall size is 43.88" W x 49.5" D x 40.5" H at 380 lb. It requires professional installation, is for indoor use only, and needs floor anchoring with 3-inch side clearance and 0.5-inch rear clearance.
