The BELM-40 tilt skillet is shown as a floor-standing unit with legs. The BELM-40 tilt skillet has a 40-gallon capacity (152 liters). The BELM-40 tilt skillet has a listed voltage of 208 V for 3-phase operation. The BELM-40 tilt skillet has a rated electrical input of 18 kW. The Southbend BELM-30 and BELM-40 electrically heated skillets have manual tilt. The control enclosure is designed to meet NEMA-2 and provide protection against dripping and light splashing; the skillet also has a thermostat indicator light, a pan tilt switch that shuts elements off if tilted more than 5°, and a high-temperature cut-off set at 536°F (280°C). The pan is formed from 10 gauge 304 stainless steel with a #4 finish exterior and polished interior with coved corners for easy cleaning. The skillet is heated by electric elements cast embedded in a full 1-3/8" (35 mm) thick aluminum casting bolted to the underside of the pan for even heat distribution across the entire surface. The cover specified for the Southbend BELM-30 and BELM-40 skillets is stainless steel.
