The Blodgett Combi model BCX-14E is a combination oven/steamer. The Blodgett Combi model BCX-14E is boiler-based. Each BCX-14E section holds fourteen 12 × 20 × 2-1/2 in deep North American hotel pans. Each BCX-14E section holds seven full-size sheet pans at 3-1/4 in spacing. The BCX-14E electric boiler-based combination oven/steamer draws 23 amp on the 480 V, 3-phase configuration. The BCX-14E electric boiler-based combination oven/steamer is rated at 19 kW on the 480 V power-supply configuration. The BCX-14E standard programmable manual control stores 100 recipes. The BCX-14E has a fully welded stainless steel frame, a 304-series bright-annealed stainless steel finish in the cooking chamber, removable stainless steel side rails, and a coved corner liner for ease of cleaning. The top, front, sides and back are stainless steel. The BCX-14E combination oven/steamer operates from 140°F to 500°F for the combination of steam and hot air. The BCX-14E combination oven/steamer operates from 140°F to 212°F in vario-steaming mode.
