The Southbend Platinum Series bakery electric convection oven is a single-deck oven. The PCEB-SINGLE oven is recommended to be installed under a vented hood. A hood is not required for the ventless option of the PCEB-SINGLE oven. Each PCEB single oven cavity has an interior width of 29 in (737 mm). Each PCEB single oven cavity has an interior height of 20 in (508 mm). Each PCEB single oven cavity has an interior depth of 29 in (737 mm). The Southbend Platinum Series oven has 11 rack positions in each oven. The Southbend Platinum Series oven's TC touchscreen temperature controller operates from 150°F to 550°F. The touchscreen digital display shows time and temperature; a fan-cycle timer pulses the fan. Recipes can be created and used in oven-group Rack mode to cook multiple items at once on different timers. The oven has a stainless-steel front, top, and sides, and its interior has a coved, fastener-free porcelain-enamel finish. Each oven's 11 kW heating-element group draws 30.6 A on the Z line at 208 VAC, 60 Hz, three phase. The controls are single phase.
