The Southbend Steam BGMTS-30 or BGMTS-40 skillet is gas-fired. BGMTS-30 gas modular tilt skillets have a capacity of 30 gallons (114 liters). BGMTS-30 gas modular tilt skillets have a gas input of 80,000 BTU/hr. BGMTS gas modular tilt skillets require single-phase electrical service. BGMTS gas modular tilt skillets require a 10-amp minimum electrical supply. The BGMTS-30 and BGMTS-40 skillets have a lowest stated cooking temperature of 100°F (38°C). The BGMTS-30 and BGMTS-40 skillets have a highest stated cooking temperature of 450°F (232°C). The BGMTS-30 and BGMTS-40 skillets have a solid state thermostat. The controls are mounted in the cabinet base and include a temperature light, tilt switch, electronic ignition, and tilt safety switch; the hydraulic lift system is powered by a 1/2 HP electric motor for smooth and precise tilting action. The cooking surface is 3/4 in triple-ply construction with a 3/8 in thick aluminum core, ensuring even heat distribution over the entire cooking surface. The pan is formed from 10 gauge 304 stainless steel with a #4 finish exterior and polished interior with coved corners for easy cleaning.
