Category: Floor Steam Kettles. KDPS-40. The Southbend KDPS-20, KDPS-30, KDPS-40, KDPS-60, KDPS-80, and KDPS-100 kettles have a pedestal base. 40 gallons (152 liters). The Southbend KDPS-20, KDPS-30, KDPS-40, KDPS-60, KDPS-80, and KDPS-100 pedestal kettles are direct-steam connected. The Southbend KDPS-20, KDPS-30, KDPS-40, KDPS-60, KDPS-80, and KDPS-100 pedestal kettles require direct steam at a minimum of 5 PSI (34 kPa) and a maximum of 30 PSI (206 kPa). The liner of each Southbend KDPS-20, KDPS-30, KDPS-40, KDPS-60, KDPS-80, and KDPS-100 kettle is 316 stainless steel. Construction is all-welded satin-finish stainless steel, type 304. The kettle has a double-wall interior that forms a steam jacket around the lower 2/3 of the kettle. The cover included with each Southbend KDPS-20, KDPS-30, KDPS-40, KDPS-60, KDPS-80, and KDPS-100 kettle is counterbalanced. Each Southbend KDPS-20, KDPS-30, KDPS-40, KDPS-60, KDPS-80, and KDPS-100 kettle has a 2 in (50 mm) sanitary draw-off valve. The KDPS-40 kettle has a minimum clearance of 3” (76 mm) at the sides.
