Cook and Hold Cabinet. The CH600 cabinet accommodates 6 18″×26″ trays. The CH600 cabinet has an approximate meat capacity of 80 lb. The CH600, CH900 and CH1800 cook and hold cabinets have a cook-cycle temperature range of 100°F to 325°F. The CH600, CH900 and CH1800 cook and hold cabinets have a hold-cycle temperature range of 100°F to 200°F. 240V, 1PH. The CH600 cabinet has a listed electrical input of 3200 W. The CH600 cabinet draws 13.3 A. The controls include a master on/off switch with a “start/cancel” button for cook cycles, a touchpad to view actual temperature, and separate controls and displays for cook and hold temperature. An 18-hour digital timer counts down during the cook cycle and counts up automatically during the hold cycle. The cabinets have all-stainless-steel, double-wall, insulated construction. The CH600, CH900 and CH1800 cook and hold cabinets do not require a ventilation hood, subject to checking local codes.
