KEPS-40F. The Southbend KEPS-20F/30F/40F/60F steam kettle is a pedestal kettle. The KEPS-40F kettle has a capacity of 40 gallons (152 liters). The Southbend KEPS-F steam kettle uses electric power. The steam jacket of the Southbend Steam KEPS-20F, KEPS-30F, KEPS-40F, and KEPS-60F kettle surrounds the full kettle. The Southbend KEPS-F steam kettle has a self-generating steam system. The 24 kW, 3-phase electrical configuration has a rated voltage of 240 V. The Southbend KEPS-F kettle operates at a maximum pressure of 50 psi (345 kPa). The controls include a power switch, thermostat, pilot light, low-water light, vacuum/pressure gauge, safety relief valve, and low-water shutoff. Construction is all-welded #4-finish type 304 stainless steel. The interior liner is standard with 316 stainless steel for high-acid-content cooking.
