The Southbend BEMTS-40 tilt skillet has a capacity of 40 gallons (152 liters). The Southbend BEMTS-40 is electrically heated. The Southbend BEMTS-30 and BEMTS-40 skillets are specified for operation at 208 VAC, three phase, 60 Hz. The Southbend BEMTS-40 has an electrical input of 18 kW. The pan is formed from 10-gauge 304 stainless steel, with a #4-finish exterior and polished interior with coved corners for easy cleaning. The skillet enclosure is #4-finished type 304 stainless steel, with a removable side panel and two stainless-steel front cabinet doors. The pan has a spring-assisted, hinged, stainless-steel cover with a full-width handle, no-drip condensate guide, etched gallon markings, and a vent port with swing cover.
