Each ECX-10S compartment holds 10 pans that are 1 in deep. Each ECX-10S compartment holds 5 pans that are 2-1/2 in deep. Each ECX-10S compartment holds 3 pans that are 4 in deep. The boiler paired with the ECX-10S-6 steamer is rated at 36 kW. voltage: 220. Each cooking chamber is all-welded type 316 stainless steel, fully insulated, and provided with removable stainless steel pan supports. Boiler controls include automatic water-level control, pressure gauge, water gauge glass, operating pressure control, safety high-limit pressure control, and safety relief valve. Each cooking compartment of the steamer includes a timer with a duration of 60 minutes. An audible signal sounds at the end of the cooking cycle.
