The Southbend Platinum Series bakery electric convection oven is a single-deck oven. PCE75B/T. The Southbend Platinum Series oven has 11 rack positions in each oven. The Southbend Platinum Series oven is supplied with five wire racks with each oven. The Southbend Platinum Series oven's TC touchscreen temperature controller operates from 150°F to 550°F. The Southbend Platinum Series oven's TC touchscreen controls include a Hold thermostat ranging from 140°F to 200°F. The touchscreen digital display shows time and temperature; a fan-cycle timer pulses the fan. Recipes can be created and used in oven-group Rack mode to cook multiple items at once on different timers. For the 7.5 kW heating-element group at 208 VAC, 60 Hz, the single-phase current is 36.1 A. The phase for PCEB electric oven units must be specified upon ordering. The oven has a stainless-steel front, top, and sides, and its interior has a coved, fastener-free porcelain-enamel finish. The oven includes a heat-keeping dual-door seal system and a stay-cool heavy-duty door handle.
