ECX-24-SB. Convection Steamer. The ECX-24-SB convection steamer has two cooking compartments. Each compartment of the ECX-24-SB steamer has a capacity of 2 pans at 2-1/2-inch depth in the table’s 4-inch-and-2-1/2-inch pan-depth format. Each compartment of the ECX-24-SB steamer has a capacity of 4 pans at 4-inch depth in the table’s 4-inch-and-2-1/2-inch pan-depth format. Each ECX-24-SB steamer compartment holds 12 pans at 1-inch depth in the listed 4-inch-and-1-inch pan-depth format. The standard 42 kW, 3-phase ECX-24-SB steamer draws 101 A at 240 V. The ECX-24-SB convection steamer independently controls timing for each cooking compartment. The timing controls include a green ready pilot light and a red cook pilot light; an audible signal sounds at the end of the cooking cycle. The steamer is constructed of satin-finish type 304 stainless steel, with a one-piece, all-welded type 316 stainless-steel cooking chamber.
