The Southbend compartment cooker operates on direct steam. number of compartments: 3. Each compartment is independently controlled by an automatic timer control with visible and audible signals. The cooker is constructed of all-welded type 304 #4 finished stainless steel. The cooker controls are equipped for operation on 115 VAC. The direct steam supply to the compartment cooker must provide a flow of 150 lbs (68 kg) per hour. The direct steam supplied to the compartment cooker must enter at a minimum pressure of 15 psi (103 kPa). The direct steam compartment cooker's maximum compartment operating pressure is 6 psi (41 kPa).
