The LANG ECOH oven accommodates 12 × 20 in. hotel pans that are 2-1/2 in. deep, with an optimum load of 10. The LANG ECOH -AP model's control package is Accu-Plus. The LANG ECOH -AP model uses analog knob-set controls. The Accu-Plus controls include a pulse-fan switch and a HIGH-LOW speed fan switch.
